Career and Technical Education (CTE) students at The Calais School were treated to a special cooking presentation yesterday. Chef James Grier of The Gourmet Exchange worked with our tourism and hospitality students in our CTE vocational lab where he provided insight into the hospitality industry, demonstrated cooking techniques and even shared his tomato bisque recipe with the class.
He also treated students and staff to delicious bruschetta and apple pumpkin cheesecake!
Presenter James Grier, former chef for Williams Sonoma, is the Chef and Owner of the Gourmet Exchange in Sussex, NJ. Established in 2004, The Gourmet Exchange specializes in making infused olive oils, provides private catering, and offers a selection of seasonal specialty foods and desserts.
The Gourmet Exchange sells and offers samples or their infused olive oils at farmers markets and festivals in New York and New Jersey, including Applefest held in Warwick, NY and the Autumn Lights Festival in West Milford, NJ.
